– 1 cup unsalted butter, softened
– 1 1/2 cups granulated sugar
– 1 large egg
– 1 teaspoon vanilla extract
– 1/2 teaspoon almond extract (optional)
– 1/4 cup holiday sprinkles, plus more for decorating
Directions:
1. Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper or silicone mats.
2. In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
3. In a large mixing bowl, cream the butter and sugar together until light and fluffy. Beat in the egg, vanilla extract, and almond extract (if using).
4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Gently fold in 1/4 cup of holiday sprinkles.
5. Using a cookie scoop or tablespoon, drop rounded dough balls onto the prepared baking sheets, spacing them about 2 inches apart. Flatten slightly with the bottom of a glass.
6. Decorate with additional sprinkles, pressing them gently into the dough.
7. Bake for 8-10 minutes, or until the edges are lightly golden but the centers remain soft. Do not overbake.
8. Let the cookies cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
