Ingredients:
– 1 1/2 cups mixed dried fruits (raisins, currants, dried cherries, etc.)
– 1/2 cup candied orange peel, chopped
– 1/2 cup candied cherries, chopped
– 1/2 cup walnuts or pecans, chopped
– 1/2 cup orange juice
– 1/2 cup unsalted butter, softened
– 3/4 cup brown sugar, packed
– 2 large eggs
– 1 teaspoon vanilla extract
– 1 1/2 cups all-purpose flour
– 1 teaspoon baking powder
– 1/2 teaspoon ground cinnamon
– 1/4 teaspoon ground nutmeg
– 1/4 teaspoon salt
Directions:
1. Preheat your oven to 325°F (160°C). Grease and line a loaf pan with parchment paper.
2. In a bowl, combine the dried fruits, candied peel, candied cherries, and nuts. Pour orange juice over the mixture and let it soak for 15 minutes.
3. In a mixing bowl, cream the butter and brown sugar together until light and fluffy. Beat in the eggs, one at a time, followed by the vanilla extract.
4. In a separate bowl, sift together the flour, baking powder, cinnamon, nutmeg, and salt. Gradually mix the dry ingredients into the wet ingredients until just combined.
5. Fold in the soaked fruit mixture, including any remaining orange juice. Pour the batter into the prepared loaf pan and smooth the top.
6. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
7. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Slice and serve with your favorite holiday beverage!
