Beef Tacos with Fresh Pico de Gallo

Ingredients:

  • 1 lb ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 8 small corn tortillas
  • 1 cup shredded cheddar cheese
  • 2 medium tomatoes, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon lime juice
  • Salt to taste

Directions:

  1. Prepare the Pico de Gallo: In a small bowl, combine the diced tomatoes, red onion, cilantro, lime juice, and a pinch of salt. Mix well and set aside.
  2. Cook the Beef: In a large skillet over medium heat, add the ground beef and cook until browned. Drain any excess fat.
  3. Add the chopped onion and minced garlic to the skillet. Cook until the onion is translucent.
  4. Stir in the chili powder, cumin, paprika, salt, and pepper. Cook for an additional 2-3 minutes until the spices are well combined.
  5. Assemble the Tacos: Warm the corn tortillas in a dry skillet or microwave. Place a portion of the beef mixture onto each tortilla.
  6. Sprinkle shredded cheddar cheese over the beef. Top with a generous spoonful of pico de gallo.
  7. Serve immediately, garnished with additional cilantro and lime wedges if desired.
