- 1 lb ground beef
- 1 small onion, finely chopped

- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 8 small corn tortillas
- 1 cup shredded cheddar cheese
- 2 medium tomatoes, diced
- 1/2 red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 tablespoon lime juice
- Salt to taste
Directions:
- Prepare the Pico de Gallo: In a small bowl, combine the diced tomatoes, red onion, cilantro, lime juice, and a pinch of salt. Mix well and set aside.
- Cook the Beef: In a large skillet over medium heat, add the ground beef and cook until browned. Drain any excess fat.
- Add the chopped onion and minced garlic to the skillet. Cook until the onion is translucent.
- Stir in the chili powder, cumin, paprika, salt, and pepper. Cook for an additional 2-3 minutes until the spices are well combined.
- Assemble the Tacos: Warm the corn tortillas in a dry skillet or microwave. Place a portion of the beef mixture onto each tortilla.
- Sprinkle shredded cheddar cheese over the beef. Top with a generous spoonful of pico de gallo.
- Serve immediately, garnished with additional cilantro and lime wedges if desired.
