Fresh Marinated Cucumbers, Onions, and Tomatoes

Ingredients:

  • 2 large cucumbers, sliced
  • 1 large red onion, thinly sliced
  • 4 large tomatoes, cut into wedges
  • 1/2 cup white vinegar
  • 1/4 cup water
  • 1/4 cup sugar
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh dill, chopped (optional)

Directions:

  1. Prepare Vegetables:
    • In a large bowl, combine the sliced cucumbers, thinly sliced red onion, and tomato wedges.
  2. Make the Marinade:
    • In a small bowl, whisk together the white vinegar, water, sugar, olive oil, salt, and black pepper until the sugar is fully dissolved.
  3. Combine and Marinate:
    • Pour the marinade over the vegetables. Toss gently to ensure all the vegetables are well coated with the marinade.
  4. Chill:
    • Cover the bowl with plastic wrap or a lid and refrigerate for at least 2 hours. For best results, marinate overnight to allow the flavors to fully develop.
  5. Serve:
    • Before serving, toss the vegetables once more and sprinkle with fresh dill if desired. Serve chilled.
