Ingredients:
- 3 medium zucchinis
- 1/2 cup all-purpose flour
- 2 large eggs
- 1 cup panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Cooking spray
Directions:
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly spray with cooking spray.
- Cut the zucchinis into sticks about 3-4 inches long and 1/2 inch thick.
- Place the flour in a shallow bowl. Beat the eggs in a second shallow bowl. In a third shallow bowl, combine the panko breadcrumbs, Parmesan cheese, garlic powder, paprika, dried oregano, salt, and pepper.
- Dredge each zucchini stick in the flour, shaking off any excess. Dip into the beaten eggs, then coat with the breadcrumb mixture, pressing lightly to adhere.
- Arrange the coated zucchini sticks in a single layer on the prepared baking sheet.
- Lightly spray the zucchini sticks with cooking spray to help them crisp up.
- Bake for 20-25 minutes, or until the zucchini fries are golden brown and crispy, turning once halfway through cooking.
