Crispy Baked Zucchini Fries

Ingredients:

  • 3 medium zucchinis
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Cooking spray

Directions:

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly spray with cooking spray.
  2. Cut the zucchinis into sticks about 3-4 inches long and 1/2 inch thick.
  3. Place the flour in a shallow bowl. Beat the eggs in a second shallow bowl. In a third shallow bowl, combine the panko breadcrumbs, Parmesan cheese, garlic powder, paprika, dried oregano, salt, and pepper.
  4. Dredge each zucchini stick in the flour, shaking off any excess. Dip into the beaten eggs, then coat with the breadcrumb mixture, pressing lightly to adhere.
  5. Arrange the coated zucchini sticks in a single layer on the prepared baking sheet.
  6. Lightly spray the zucchini sticks with cooking spray to help them crisp up.
  7. Bake for 20-25 minutes, or until the zucchini fries are golden brown and crispy, turning once halfway through cooking.
