Fresh and Crunchy Carrot Apple Slaw

Ingredients:

  • 3 large carrots, julienned
  • 2 large apples, julienned
  • 1/2 cup dried cranberries
  • 1/4 cup crumbled feta cheese
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey
  • Salt and pepper to taste

Directions:

  1. In a large bowl, combine the julienned carrots, apples, dried cranberries, and crumbled feta cheese.
  2. In a separate small bowl, whisk together the Greek yogurt, mayonnaise, apple cider vinegar, honey, salt, and pepper until well combined.
  3. Pour the dressing over the carrot and apple mixture and toss to coat evenly.
  4. Refrigerate for at least 30 minutes before serving to allow the flavors to meld.
