Classic Creamed Chipped Beef on Toast

8 oz dried beef, sliced into strips
4 tablespoons butter
4 tablespoons all-purpose flour
3 cups whole milk
1/4 teaspoon black pepper
1/4 teaspoon nutmeg (optional)
8 slices of toast (white, whole wheat, or your choice)
Chopped parsley for garnish (optional)

In a large skillet, melt the butter over medium heat.
Add the flour to the skillet and whisk continuously for about 2-3 minutes to create a roux. It should be a light golden color.
Gradually add the milk, whisking constantly to prevent lumps, and cook until the mixture thickens, about 5-7 minutes.
Add the sliced dried beef to the skillet and stir to combine.
Season with black pepper and nutmeg (if using), adjusting to taste.
Simmer for another 2-3 minutes, until the beef is heated through.
Meanwhile, toast the slices of bread until golden brown.
