Ingredients:
1 pound cake (store-bought or homemade)
8 oz cream cheese, softened
1/4 cup granulated sugar
1 teaspoon vanilla extract
1 cup strawberries, chopped
1/2 cup strawberry jam
1/2 cup heavy whipping cream
1 tablespoon powdered sugar
Fresh mint leaves for garnish (optional)
Directions:
Preheat your oven to 350°F (175°C) if using a homemade pound cake.
In a medium bowl, beat the cream cheese, granulated sugar, and vanilla extract until smooth.
Fold in the chopped strawberries and set aside.
Slice the pound cake horizontally into three even layers.
Spread the strawberry jam on the bottom layer.
Evenly spread half of the cream cheese mixture over the jam.
Place the middle layer of pound cake on top and repeat the process with the remaining cream cheese mixture and the top layer of pound cake.
In a separate bowl, whip the heavy whipping cream with powdered sugar until stiff peaks form.
Spread the whipped cream over the top of the pound cake.
Garnish with fresh mint leaves, if desired.
Chill in the refrigerator for at least 1 hour before serving.
