Ingredients:
– 8 oz semi-sweet chocolate, chopped
– ½ cup heavy cream
– 1 tsp vanilla extract (optional)
– Cocoa powder, chopped nuts, or sprinkles (for coating)

Directions:

1. In a heatproof bowl, add the chopped chocolate.

2. Heat the heavy cream in a small saucepan over medium heat until it just begins to simmer. Do not boil.

3. Pour the hot cream over the chocolate and let it sit for 2-3 minutes to melt the chocolate.

4. Gently stir the mixture until smooth and glossy. Stir in vanilla extract if desired.

5. Cover the bowl with plastic wrap and refrigerate for 2-3 hours, or until the mixture is firm enough to scoop.

6. Use a small spoon or a melon baller to scoop out portions of the chocolate mixture. Roll into balls with your hands.

7. Roll each truffle in your desired coating (cocoa powder, chopped nuts, or sprinkles).

8. Store the truffles in an airtight container in the fridge until ready to serve.
