  • 6 cups yellow squash, sliced
  • 1 onion, chopped
  • 2 eggs, beaten
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1 cup crushed buttery crackers
  • 1/4 cup melted butter
  • Salt and pepper to taste

Directions Of Creamy Yellow Squash Casserole Delight:

  1. Preheat the oven to 350°F (175°C).
  2. In a large pot, bring water to a boil. Add the sliced yellow squash and chopped onion. Cook for 5 minutes or until tender. Drain well.
  3. In a large bowl, combine the beaten eggs, shredded cheddar cheese, sour cream, and mayonnaise. Mix well.
  4. Stir the cooked squash and onion into the egg mixture. Add salt and pepper to taste.
