Ingredients:
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/4 cup unsweetened cocoa powder
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup buttermilk
- 1/4 cup vegetable oil
- 1 large egg
- 1 tsp vanilla extract
- 1/2 cup hot water
- 1 cup heavy cream
- 8 oz semi-sweet chocolate, chopped
- Chocolate sprinkles (optional)
Directions:
- Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
- In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add the buttermilk, vegetable oil, egg, and vanilla extract to the dry ingredients and mix until well combined.
- Gradually add the hot water to the batter, mixing until smooth.
- Pour the batter into the cupcake liners, filling each about two-thirds full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow the cupcakes to cool completely.
- To make the ganache, heat the heavy cream in a small saucepan over medium heat until it begins to simmer. Remove from heat and pour over the chopped chocolate. Let it sit for 5 minutes, then stir until smooth.
- Dip the tops of the cooled cupcakes into the ganache, letting the excess drip off. If desired, sprinkle with chocolate sprinkles.
- Allow the ganache to set before serving.
