Ingredients:
For the Crust:
• 24 chocolate sandwich cookies (like Oreos), crushed
• 1/4 cup melted butter
For the Cake Layers:
• 1/2 gallon vanilla ice cream, softened
• 1/2 gallon peppermint ice cream, softened
• 1 tsp peppermint extract (optional, for extra flavor)
For the Whipped Topping:
• 2 cups heavy whipping cream
• 1/2 cup powdered sugar
• 1/2 tsp peppermint extract
For Garnish:
• Crushed peppermint candies or candy canes
• Peppermint bark pieces or peppermint KitKats (optional)
• Red and white sprinkles
Instructions:
1. Line a 9-inch springform pan with parchment paper.
2. Mix crushed cookies and melted butter in a bowl. Press firmly into the bottom of the pan to form the crust. Freeze for 10 minutes.
3. Spread softened vanilla ice cream over the crust evenly. Freeze for 30–45 minutes.
4. Spread softened peppermint ice cream over the vanilla layer. Freeze for 1 hour or until firm.
5. In a mixing bowl, beat the whipping cream, powdered sugar, and peppermint extract until stiff peaks form.
6. Remove cake from the pan and frost the top and sides with whipped cream.
7. Decorate with crushed peppermint candies, bark pieces, and festive sprinkles.
8. Freeze for at least 2 hours before slicing. Serve chilled and enjoy the peppermint perfection!
