Heavenly Banana Walnut Cream Cake

Ingredients:

For the Cake:
• 2 ripe bananas, mashed
• 1/2 cup crushed walnuts
• 1 cup granulated sugar
• 1/2 cup light brown sugar
• 1/2 cup vegetable oil
• 1/2 cup buttermilk
• 2 eggs
• 1 tsp vanilla extract
• 2 cups all-purpose flour
• 1 tsp baking powder
• 1/2 tsp baking soda
• 1/2 tsp salt
• 1 tsp ground cinnamon

For the Cream Frosting:
• 8 oz cream cheese, softened
• 1/2 cup unsalted butter, softened
• 3 cups powdered sugar
• 1 tsp vanilla extract
• Optional: a pinch of salt

For Topping:
• Chopped walnuts

Instructions:
1. Preheat oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
2. In a large bowl, beat together sugars, oil, buttermilk, eggs, vanilla, and mashed bananas until smooth.
3. In another bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
4. Gradually mix dry ingredients into the banana mixture. Fold in crushed walnuts.
5. Divide batter evenly among the pans and bake for 25–30 minutes or until a toothpick comes out clean. Cool completely.
6. For the frosting, beat cream cheese and butter until smooth. Add powdered sugar and vanilla, beat until fluffy.
7. Layer the cakes with frosting between each layer. Frost the outside and top with chopped walnuts.
8. Chill before serving for best results. Slice and enjoy the heavenly delight!
