Brownie Refrigerator Cake

Ingredients:

  • 1 box brownie mix (plus ingredients listed on the box)

  • 1 (8 oz) package cream cheese, softened

  • 1 cup powdered sugar

  • 1 tsp vanilla extract

  • 1 (8 oz) tub whipped topping (like Cool Whip), thawed

  • 1 (3.9 oz) box instant chocolate pudding mix

  • 2 cups cold milk

  • ½ cup mini chocolate chips

  • Fresh raspberries or strawberries (optional, for topping)

  • Chocolate ganache or syrup for drizzling (optional)

Instructions:

  1. Bake the Brownie Base:
    Preheat oven and prepare brownies according to package instructions. Bake in a 9×13-inch pan. Let them cool completely.

  2. Make the Cheesecake Layer:
    In a bowl, beat softened cream cheese, powdered sugar, and vanilla until smooth. Fold in half of the whipped topping. Spread over the cooled brownies.

  3. Prepare Pudding Layer:
    Whisk pudding mix with cold milk until thickened (about 2 minutes). Spread over the cheesecake layer.

  4. Top It Off:
    Spread the remaining whipped topping over the pudding layer. Sprinkle with mini chocolate chips. Add berries and a drizzle of chocolate ganache or syrup if desired.

  5. Chill:
    Cover and refrigerate for at least 4 hours, or overnight for best results.

  6. Serve & Enjoy:
    Slice and serve chilled. Store leftovers in the refrigerator.
