Easy Salted Caramel Chocolate Chip Cheesecake

Ingredients:

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 3 packs (8 oz each) cream cheese, softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1/2 cup mini chocolate chips
  • 1/2 cup caramel sauce (plus extra for drizzling)
  • Whipped cream for garnish
  • Pinch of sea salt for topping

Directions:

  1. Preheat the oven to 325°F (165°C). Grease a 9-inch springform pan.
  2. In a medium bowl, combine graham cracker crumbs and melted butter. Press into the bottom of the pan to form a firm crust.
  3. In a large mixing bowl, beat cream cheese and sugar until smooth. Add vanilla extract, then mix in eggs one at a time.
  4. Fold in the chocolate chips and 1/2 cup of caramel sauce. Pour over the crust in the pan.
  5. Bake for 50-60 minutes or until the center is slightly jiggly but mostly set. Cool to room temperature, then refrigerate for at least 4 hours or overnight.
  6. Before serving, drizzle with additional caramel sauce, sprinkle with sea salt, and garnish with whipped cream.
