Ingredients:
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 3 packs (8 oz each) cream cheese, softened
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 3 large eggs
- 1/2 cup mini chocolate chips
- 1/2 cup caramel sauce (plus extra for drizzling)
- Whipped cream for garnish
- Pinch of sea salt for topping
Directions:
- Preheat the oven to 325°F (165°C). Grease a 9-inch springform pan.
- In a medium bowl, combine graham cracker crumbs and melted butter. Press into the bottom of the pan to form a firm crust.
- In a large mixing bowl, beat cream cheese and sugar until smooth. Add vanilla extract, then mix in eggs one at a time.
- Fold in the chocolate chips and 1/2 cup of caramel sauce. Pour over the crust in the pan.
- Bake for 50-60 minutes or until the center is slightly jiggly but mostly set. Cool to room temperature, then refrigerate for at least 4 hours or overnight.
- Before serving, drizzle with additional caramel sauce, sprinkle with sea salt, and garnish with whipped cream.
