Ingredients:
– 4 salmon fillets (6 oz each)
– 1 lb asparagus, trimmed
– 3 tbsp melted butter
– 3 garlic cloves, minced
– Juice of 1 large lemon
– 1 tsp lemon zest
– Salt and pepper, to taste
– 1 tbsp fresh parsley, chopped (for garnish)
– Lemon slices, for garnish
Directions:
1. Prep Oven and Foil:
Preheat oven to 375°F (190°C). Prepare four large sheets of foil, enough to wrap each salmon fillet and asparagus bundle.
2. Make Sauce:
In a small bowl, whisk together melted butter, garlic, lemon juice, lemon zest, salt, and pepper.
3. Assemble Foil Packs:
Place a salmon fillet in the center of each foil sheet. Arrange asparagus on one side of the salmon. Drizzle the lemon garlic butter sauce evenly over the salmon and asparagus.
4. Seal and Bake:
Fold the foil over the salmon and asparagus, sealing it to create a packet. Place packets on a baking sheet and bake for 15-20 minutes, or until the salmon is cooked through.
5. Garnish & Serve:
Carefully open packets, garnish with fresh parsley and lemon slices. Serve warm, straight from the foil.
