Ingredients:
- 1 ¾ cups (220g) all-purpose flour
- ¾ cup (75g) unsweetened cocoa powder
- 1 ½ teaspoons baking powder
- 1 ½ teaspoons baking soda
- 1 teaspoon salt
- 2 cups (400g) granulated sugar
- 2 large eggs, at room temperature
- 1 cup (240ml) whole milk, at room temperature
- ½ cup (120ml) vegetable oil
- 2 teaspoons vanilla extract
- 1 cup (240ml) boiling water
- 1 ½ cups (270g) chocolate chips (plus extra for topping)
Instructions:
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch (23×33 cm) baking pan or two 9-inch round cake pans.
- Combine dry ingredients: In a large bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt. Add the sugar and whisk until well combined.
- Mix wet ingredients: In another bowl, beat the eggs, milk, oil, and vanilla extract until well combined.
- Combine wet and dry ingredients: Add the wet ingredients to the dry ingredients and beat on medium speed until well combined.
- Add boiling water: Gradually add the boiling water to the batter, mixing until smooth. The batter will be thin, but that’s okay.
- Fold in chocolate chips: Gently fold in 1 ½ cups of chocolate chips.
- Pour batter into the pan(s): Pour the batter into the prepared baking pan(s). Sprinkle extra chocolate chips on top for a nice finish.
- Bake: Bake for 30-35 minutes for a 9×13 inch pan or 25-30 minutes for 9-inch round pans, or until a toothpick inserted into the center comes out clean.
- Cool and serve: Allow the cake to cool in the pan for 10 minutes, then remove from the pan and cool completely on a wire rack.
