Ingredients :
1 large potato
1 small onion
1/4 cup all-purpose flour
1 large egg,
1 t salt
1/4 tsp ground pepper
vegetable oil ( for frying )
Instructions :
Peel the potatoes and onions and chop them into coarse slices. (I used the grater on my mandolin, but you can also use a food processor or box grater.) Use a cheesecloth or colander to squeeze the vegetables so they are as dry as possible. Leave it for two minutes, then squeeze it to dry again.
In a large bowl, whisk together flour, eggs, salt, and pepper. Add the potato and onion mixture until all the pieces are evenly coated.
In a medium skillet, heat 2 tablespoons of vegetable oil until boiling. Place small circles of the potato mixture into the skillet, spreading with the back of a spoon if necessary.
Simmer over moderate heat until edges are golden, about 1-1/2 minutes; Flip and let it cook until golden on the bottom, about 1 minute.
Drain surplus oil on paper towels. Repeat the process with the rest of the potato mixture, adding more oil to the skillet as needed. You can continue to heat the finished latex in the oven at 200 degrees Fahrenheit while you do the rest until everything is hot and ready to serve at the same time.
